Biscuits makes about 5 dz(depending on how big you make them)
1pkg yeast (2 1/4 tsp)
5 Tbl warm water
5 c flour
5 tsp baking powder
1/2 tsp baking soda
1tsp salt
1 tsp sugar
3 Tbl sugar
1 c shortening
2 c buttermilk
preheat oven to 450
Sprinkle yeast and 1 tsp sugar over warm water and stir to dissolve. Set aside. In a large bowl combine flour, baking powder, baking soda, salt, 3 TBl sugar. Stir gently to "sift" together. Add shortening and blend with knives or hands, until mixture resembles crumbs. Add buttermilk and yeast mixture and stir well. Turn onto floured counter and knead LIGHTLY about6-10 times only. Roll or pat to about 3/4" thick and cut. Place on cookie sheet and bake for 8 mins or until LIGHTLY browned.
*Dough will keep in fridge if covered for about 3 days or it can be frozen (after shaping). to use if frozen-take out desired amount the night before and let thaw in fridge.
Pancakes-makes about 8-10 depending on size
1 egg
1 c flour
3/4 c milk
2 Tbl oil
1Tbl sugar
3 tsp baking powder
1/2 tsp salt
Beat egg until fluffy then add other ingredients
